The natural mineral water is defined as "healthy waters bacteriologically extracted of underground deposits and that appears of a spring in one or several natural or perforated points of lighting". The natural mineral water, is obtained from springs that arrive at the surface by means of perforations of different depth. What differentiates to this from other drink waters is its mineral nature and its original purity, since its underground origin protects the water-bearing one of chemical or bacterial contaminations.
   
One of the characteristics that it defines a natural mineral water is its purity, determined to a great extent by the depth from which it comes. In the Earth surface contamination, microbial can exist and chemical, that diminishes as makes the depth. In the starting point, a mineral water presents/displays certain flora, native or natural.

Thus, its collection must be made under conditions that guarantee their original bacteriological quality. In addition, the storage must be made in conditions that assure their suitable conservation, aggressive protégé's of the solar light and scents, in a fresh and dry place.


When natural mineral water speech, makes reference to the waters that contain not only salts and minerals, but that has in addition natural properties, that arise from the source of which was obtained. The mineral water is characterized being a pure water in its place of origin (must leave a spring), and those special properties cannot never be created artificially and to obtain such quality of water.

 

On the natural mineral water only two operations are allowed, that improve their quality without varying the initial composition sensibly: to eliminate unstable natural compounds like iron and sulfur, and to modify its carbon dioxide gas content. The reduction or elimination of the iron and sulfur is made to avoid that the water presents/displays a nondesirable color, scent or flavor. The type and amount of substances dissolved in the water depend on the geologic typology of the zone where the source flows.
   

According to minerals, several types of natural mineral water are distinguished:

TIPO DE AGUA MINERAL

RESIDUO SECO

VERY LOW WATER OF MINERALIZACION: they cross granite and basalt. Dry remainder of up to 50 mg/l
LOW WATER OF MINERALIZATION:they filter by compact sand. They are recommended for the infantile food elaboration and people with problems of kidney.
Dry remainder of up to 500 mg/l
STRONG WATER OF MINERALIZATION:they have a high calcium content and magnesium, they filter by lime stone and they present/display a hard and earthy flavor. They are recommended for people with determined significant deficiencies in mineral.
Dry remainder of up to 1500 mg/l
